Ingredients

6 cups self-rising cornmeal (Polly always preferred Martha White)

2 cups pancake mix

3 cups coarsely chopped onions

4 eggs, beaten

Directions:

Mix cornmeal, pancake mix, and onions. Add boiling water just to moisten the dry mix. Stir in the eggs. If it’s too thin to drop, add more cornmeal. If it’s too thick, add more water.

Fry in 350° oil for 5-7 minutes, or until golden brown.
